Ingredients
1 cup canned chickpeas (drained and rinsed)
1 cup vital wheat gluten
Instructions
- Add the chickpeas to a food processor and blend until smooth, scraping down the sides as needed.
- Add the vital wheat gluten and pulse again until a dough forms.
- Transfer the dough to a clean surface and knead for 3–5 minutes until elastic and firm.
- Shape the dough into a loaf, cutlets, tenders, or nugget shapes.
- Steam the vegan chicken for 30 minutes, flipping halfway through.
- Let it cool slightly, then slice, shred, or cube as desired.
- Use immediately or store for later use by grilling, sautéing, or marinating.
Notes
Don’t over-knead the dough or it may become too tough.
Add seasonings like garlic powder or smoked paprika for extra flavor.
Store in an airtight container in the fridge for up to 5 days or freeze for up to 2 months.
Reheat by sautéing, grilling, or microwaving.
