Description

These 3-ingredient peanut butter cookies are soft, chewy, naturally gluten-free, and made with pantry staples in under 20 minutes. Perfect for quick cravings or last-minute guests.

Ingredients

1 cup creamy peanut butter

1 cup granulated sugar

1 large egg

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, stir together the peanut butter, sugar, and egg until well combined.
  3. Using a tablespoon, scoop the dough and roll it into balls.
  4. Place the dough balls on the baking sheet, spacing them about 2 inches apart.
  5. Flatten each ball gently with a fork to make a crisscross pattern.
  6. Bake for 10–12 minutes, until the edges are lightly golden.
  7. Let the cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Add mini chocolate chips or chopped peanuts for variation.

Top with sea salt before baking for a sweet-salty flavor.

Try swapping half the sugar with brown sugar for a deeper flavor.

Chunky peanut butter can be used for extra texture.

Store in an airtight container at room temperature for up to 5 days or freeze for up to 2 months.
