Description

Air Fryer Lasagna Fritta transforms classic lasagna flavors into a crispy, bite-sized treat with a cheesy, crunchy texture, perfect as a snack or appetizer without the mess of deep frying.


Ingredients

6 cooked lasagna noodles

1 cup ricotta cheese

1/2 cup shredded mozzarella

1/4 cup grated Parmesan

1 egg

1 tsp Italian seasoning

1/2 tsp garlic powder

Salt & pepper to taste

1 cup flour

2 eggs, beaten

1 1/2 cups Italian breadcrumbs or panko

Olive oil spray

Optional for serving: Marinara sauce, extra Parmesan


Instructions

  1. Make the filling by mixing ricotta, mozzarella, Parmesan, 1 egg, Italian seasoning, garlic powder, salt, and pepper in a bowl until well combined.
  2. Lay out the cooked lasagna noodles flat and spread the cheese filling evenly over each noodle. Roll up or fold into squares or rectangles.
  3. Dredge each roll in flour, dip into beaten eggs, then coat thoroughly with breadcrumbs, pressing gently to stick.
  4. Preheat the air fryer to 375°F (190°C). Spray the fritta rolls lightly with olive oil spray and place them in the air fryer basket without overcrowding.
  5. Air fry for 8–10 minutes, flipping halfway through, until golden and crispy.
  6. Serve hot with marinara sauce and a sprinkle of extra Parmesan.

Notes

Using panko breadcrumbs gives an extra crunchy texture.

Adding cooked spinach or sausage to the filling adds flavor and nutrition.

Freezing rolls before air frying is possible; add a few extra minutes to cooking time when cooking from frozen.

Leftovers keep up to 3 days refrigerated; reheat in the air fryer at 350°F for 3-4 minutes to maintain crispiness.

Microwave reheating is not recommended as it makes fritta lose crunch.

For gluten-free option, substitute flour and breadcrumbs with gluten-free versions.

Oven baking alternative: 400°F for 15-20 minutes, turning halfway.

Ensure fresh noodles are cooked and dry before assembling to avoid sogginess.
