Ingredients
2 1/2 cups powdered sugar
2 cups almond flour
2 large egg whites
1/2 teaspoon almond extract
1/4 teaspoon cream of tartar
1/8 teaspoon salt
1/4 cup slivered almonds (optional, for garnish)
Instructions
- Preheat the oven to 325°F (163°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, whisk together the powdered sugar, almond flour, and salt.
- In a separate bowl, beat the egg whites and cream of tartar with an electric mixer until stiff peaks form.
- Gently fold the egg whites into the almond flour mixture, along with the almond extract, until just combined.
- Drop spoonfuls of the dough onto the prepared baking sheet, spacing them about 2 inches apart.
- If desired, top each cookie with a few slivered almonds for garnish.
- Bake for 15-18 minutes, or until the edges are lightly golden and the cookies have a chewy texture.
- Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Notes
If you prefer a different flavor, add a teaspoon of vanilla extract or some lemon zest to the dough.
For a crunchier texture, you can mix chopped almonds into the dough instead of just using slivered almonds on top.
For a lower-sugar version, try using powdered monk fruit sweetener instead of powdered sugar.
