Description

Almond Cloud Cookies are a gluten-free treat that combines softness, chewiness, and a light texture with a delightful nutty flavor. These cookies melt in your mouth, offering a perfect balance of sweetness and almond goodness.


Ingredients

2 1/2 cups powdered sugar

2 cups almond flour

2 large egg whites

1/2 teaspoon almond extract

1/4 teaspoon cream of tartar

1/8 teaspoon salt

1/4 cup slivered almonds (optional, for garnish)


Instructions

  1. Preheat the oven to 325°F (163°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, whisk together the powdered sugar, almond flour, and salt.
  3. In a separate bowl, beat the egg whites and cream of tartar with an electric mixer until stiff peaks form.
  4. Gently fold the egg whites into the almond flour mixture, along with the almond extract, until just combined.
  5. Drop spoonfuls of the dough onto the prepared baking sheet, spacing them about 2 inches apart.
  6. If desired, top each cookie with a few slivered almonds for garnish.
  7. Bake for 15-18 minutes, or until the edges are lightly golden and the cookies have a chewy texture.
  8. Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

If you prefer a different flavor, add a teaspoon of vanilla extract or some lemon zest to the dough.

For a crunchier texture, you can mix chopped almonds into the dough instead of just using slivered almonds on top.

For a lower-sugar version, try using powdered monk fruit sweetener instead of powdered sugar.
