Description

A light, moist, and naturally sweetened almond flour orange loaf cake bursting with fresh orange flavor, gluten-free and perfect for breakfast, dessert, or snack.


Ingredients

2 1/2 cups almond flour

1/2 teaspoon baking soda

1/4 teaspoon salt

3 large eggs

1/4 cup honey or maple syrup

1/4 cup fresh orange juice

Zest of 1 orange

1/4 cup coconut oil, melted (or butter)

1 teaspoon vanilla extract

1/2 teaspoon ground cinnamon (optional)

1/4 cup sliced almonds (optional, for topping)


Instructions

  1. Preheat the oven to 350°F (175°C) and line a 9×5-inch loaf pan with parchment paper or grease it with oil.
  2. In a large bowl, whisk together the almond flour, baking soda, salt, and cinnamon if using.
  3. In a separate bowl, beat the eggs with honey or maple syrup, orange juice, orange zest, melted coconut oil, and vanilla extract until combined.
  4. Pour the wet ingredients into the dry ingredients and stir until well combined. The batter will be thick.
  5. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  6. Optionally, sprinkle sliced almonds on top for a crunchy texture.
  7. Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

For a nutty aroma, substitute vanilla extract with almond extract.

Add fresh blueberries or chopped nuts to the batter for extra texture and flavor.

Top with a light orange glaze made from powdered sugar and orange juice for added sweetness.

Store in an airtight container at room temperature up to 3 days or refrigerate up to 1 week.
