Description

Chewy, chocolatey cookies loaded with coconut, almonds, and rich dark chocolate, inspired by the classic Almond Joy candy bar. These cookies combine textures and flavors for a comforting, indulgent treat.


Ingredients

1 cup old-fashioned rolled oats

3/4 cup shredded unsweetened coconut

1/2 cup almond flour

1/4 teaspoon baking soda

1/8 teaspoon salt

1/4 cup coconut oil, melted

1/4 cup pure maple syrup or honey

1 teaspoon vanilla extract

1/3 cup chopped almonds

1/3 cup dark chocolate chips or chopped dark chocolate


Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine the oats, shredded coconut, almond flour, baking soda, and salt.
  3. In a separate bowl, whisk together the melted coconut oil, maple syrup, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until everything is well combined.
  5. Fold in the chopped almonds and dark chocolate chips.
  6. Scoop tablespoon-sized portions of dough onto the prepared baking sheet, flattening them slightly for even baking.
  7. Bake for 10-12 minutes or until the edges are golden brown.
  8. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes

You can substitute pecans or walnuts for almonds for variety.
