Description

Amish Apple Fritter Bread is a moist, cinnamon-spiced quick bread packed with chunks of fresh apples and swirled with a rich brown sugar-cinnamon mix, then topped with a sweet glaze. It’s a cozy, bakery-style loaf perfect for breakfast, dessert, or snacking.

Ingredients

1/3 cup light brown sugar

1 teaspoon ground cinnamon

2/3 cup white sugar

1/2 cup unsalted butter, softened

2 eggs

1 1/2 teaspoons vanilla extract

1 1/2 cups all-purpose flour

1 3/4 teaspoons baking powder

1/2 cup milk

2 apples, peeled and chopped

2 tablespoons white sugar

1/2 teaspoon ground cinnamon

1/2 cup powdered sugar

12 tablespoons milk or cream

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×5-inch loaf pan with butter and a dusting of flour.
  2. In a small bowl, mix 1/3 cup brown sugar and 1 teaspoon cinnamon. Set aside.
  3. In a mixing bowl, cream together 2/3 cup white sugar and 1/2 cup softened butter until light and fluffy.
  4. Beat in the eggs one at a time, then add 1 1/2 teaspoons vanilla extract.
  5. In another bowl, whisk together 1 1/2 cups flour and 1 3/4 teaspoons baking powder.
  6. Gradually add the dry ingredients to the wet ingredients, alternating with 1/2 cup milk. Mix just until combined.
  7. In a separate bowl, toss the chopped apples with 2 tablespoons white sugar and 1/2 teaspoon cinnamon.
  8. Pour half of the batter into the prepared loaf pan. Top with half of the apple mixture and half of the cinnamon sugar mix. Lightly press into the batter.
  9. Repeat the layers with the remaining batter, apples, and cinnamon sugar. Swirl the top with a knife.
  10. Bake for 50–60 minutes, until a toothpick inserted into the center comes out clean.
  11. Let the bread cool in the pan for 15 minutes, then transfer to a wire rack to cool completely.
  12. Whisk together 1/2 cup powdered sugar and 1–2 tablespoons milk or cream to make the glaze. Drizzle over cooled bread before serving.

Notes

Use a mix of Granny Smith and Honeycrisp apples for balanced flavor.

Add 1/4 cup chopped walnuts or pecans to the apple mixture for extra texture.

Substitute sugar with coconut sugar or monk fruit sweetener for a lower sugar version.

Add 1 teaspoon apple pie spice to the batter for extra warmth.

To make it gluten-free, use a 1:1 gluten-free baking flour blend.
