Description

These Apple Cinnamon Greek Yogurt Muffins are moist, fluffy, and naturally sweetened with honey or maple syrup. Made with whole wheat flour, Greek yogurt, and juicy apple chunks, they’re a healthy and comforting option for breakfast or snacking.


Ingredients

1 cup plain Greek yogurt

1/4 cup milk of choice

1/3 cup honey or maple syrup

2 tablespoons coconut oil or melted butter

1 large egg

1 teaspoon vanilla extract

1 cup whole wheat flour

1/2 teaspoon baking soda

1/2 teaspoon baking powder

1 1/2 teaspoons ground cinnamon

1/4 teaspoon salt

1 1/2 cups finely chopped apples (peeled if desired)


Instructions

  1. Preheat the oven to 375°F (190°C) and prepare a muffin tin with paper liners or lightly grease it.
  2. In a large mixing bowl, whisk together the Greek yogurt, milk, honey or maple syrup, coconut oil, egg, and vanilla extract until smooth.
  3. In a separate bowl, mix the whole wheat flour, baking soda, baking powder, cinnamon, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Avoid overmixing.
  5. Gently fold in the chopped apples.
  6. Divide the batter evenly among the 12 muffin cups.
  7. Bake for 18–22 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the muffins cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.

Notes

Use half whole wheat and half all-purpose flour for a lighter texture.

Add chopped walnuts or pecans for extra crunch.

Sprinkle cinnamon sugar on top before baking for added sweetness.

Use plant-based yogurt and milk for a dairy-free version.

Reduce apples slightly if adding shredded carrots or zucchini.
