Ingredients
4 cod fillets
2 tablespoons honey
1 tablespoon soy sauce
1 tablespoon olive oil
1 teaspoon lemon juice
1 garlic clove, minced
1/2 teaspoon dried thyme
1/2 teaspoon paprika
Salt and pepper, to taste
Lemon wedges, for serving
Instructions
- Preheat your oven to 375°F (190°C).
- In a small bowl, whisk together the honey, soy sauce, olive oil, lemon juice, garlic, thyme, paprika, salt, and pepper.
- Place the cod fillets in a shallow dish and pour the marinade over them. Let it sit for 15-20 minutes to marinate.
- Transfer the marinated cod fillets to a baking dish and spoon any remaining marinade over the fish.
- Bake for 15-20 minutes, or until the cod flakes easily with a fork and is cooked through.
- Serve with lemon wedges and your favorite side dishes.
Notes
Feel free to add herbs such as rosemary or parsley for a fresh twist.
If cod isn’t available, substitute with other white fish like tilapia or halibut.
For a little heat, add a pinch of red pepper flakes or a dash of hot sauce to the marinade.
You can add vegetables like bell peppers or zucchini to the baking dish to roast alongside the cod.
