Description

A cozy, cake-like baked oat dish that combines the flavor of banana bread with wholesome ingredients. Perfect for breakfast or a snack, and great for meal prep.


Ingredients

1 cup old-fashioned rolled oats

1 overripe banana

2 eggs

½ cup unsweetened almond milk (or any milk of choice)

2 tablespoons honey (or preferred sweetener)

1 teaspoon baking powder

½ teaspoon vanilla extract

¼ teaspoon cinnamon

⅛ teaspoon salt

¼ cup mini chocolate chips (optional)


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a blender, combine oats, banana, eggs, milk, honey, baking powder, vanilla, cinnamon, and salt. Blend until smooth.
  3. Grease four 6-oz ramekins and divide the batter evenly among them.
  4. Sprinkle chocolate chips on top if using.
  5. Bake for about 25 minutes, or until puffed and lightly golden.
  6. Let cool for at least 5 minutes before serving.

Notes

Can add chopped nuts, berries, or Greek yogurt for variations.

Use flax eggs and maple syrup for a vegan version.

Store in the fridge for up to 4 days or freeze for a month.

Reheat in the microwave or oven before serving.
