Ingredients
1 lb ground beef
1 small onion, diced
2 cloves garlic, minced
1 (14.5 oz) can diced tomatoes
1 (8 oz) can tomato sauce
1 teaspoon Italian seasoning
½ teaspoon paprika
Salt & pepper to taste
2 cups cooked egg noodles
1 cup sour cream
1 cup shredded cheddar cheese
½ cup shredded mozzarella cheese
¼ cup chopped green onions (optional)
Instructions
- In a skillet over medium heat, cook ground beef and diced onion until the beef is browned and the onion softens. Add minced garlic and cook for an additional minute, making sure the garlic becomes fragrant.
- Stir in the diced tomatoes, tomato sauce, Italian seasoning, paprika, salt, and pepper. Let the mixture simmer for about 10 minutes, allowing the flavors to meld together.
- Preheat your oven to 350°F (175°C). In a large bowl, mix the cooked egg noodles with sour cream until well combined.
- Grease a 9×13-inch baking dish and layer half of the noodle mixture on the bottom. Top with half of the beef sauce. Repeat the layers and then sprinkle the shredded cheddar and mozzarella cheese on top.
- Bake the casserole uncovered in the preheated oven for 25 minutes, or until the cheese is melted and bubbly. Garnish with chopped green onions, if desired, and serve warm.
Notes
If you want an extra kick, add a pinch of red pepper flakes to the beef sauce for a little spice.
