Description

Wholesome and naturally sweetened berry oat bars made with hearty oats, whole wheat flour, and a juicy berry layer topped with a crisp crumble. Perfect for breakfast, snack, or light dessert.


Ingredients

2 cups old-fashioned rolled oats

1 cup whole wheat flour

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 cup coconut oil, melted

1/2 cup pure maple syrup

1 teaspoon vanilla extract

1 1/2 cups mixed berries (fresh or frozen)

1 tablespoon chia seeds

1 tablespoon lemon juice


Instructions

  1. Preheat oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  2. In a large bowl, combine oats, whole wheat flour, baking soda, and salt.
  3. In a separate bowl, whisk together melted coconut oil, maple syrup, and vanilla extract.
  4. Pour wet ingredients into dry ingredients and stir until fully combined.
  5. Set aside about 3/4 cup of the oat mixture for topping. Press the remaining mixture firmly into the prepared pan to form an even crust.
  6. In a small bowl, toss berries with chia seeds and lemon juice. Spread evenly over the crust.
  7. Sprinkle reserved oat mixture over the berry layer and gently press down.
  8. Bake for 30–35 minutes, until the top is golden brown.
  9. Allow bars to cool completely before slicing into 12 bars.

Notes

Use frozen berries without thawing for best texture.

Swap mixed berries with blueberries or raspberries if desired.

Add chopped nuts for extra crunch.

For gluten-free version, use certified gluten-free oats and gluten-free flour blend.

Store at room temperature for 2 days, refrigerate up to 5 days, or freeze up to 3 months.
