Ingredients
2 cups white chocolate chips
2 tablespoons heavy cream (35% or full-fat)
2 tablespoons blue Curaçao liqueur (or substitute with 1 tablespoon extra cream + blue food coloring + orange extract for alcohol-free version)
1/2 cup sanding sugar for coating
Instructions
- In a microwave-safe bowl, combine white chocolate chips and heavy cream.
- Microwave on medium power in 30-second intervals, stirring after each interval until smooth and melted.
- Stir in the blue Curaçao (or substitute) until the mixture is evenly tinted and smooth.
- Cover the bowl and refrigerate for about 2 hours, until the mixture is firm enough to shape.
- Line a baking sheet with parchment paper and pour sanding sugar into a shallow bowl.
- Use a teaspoon or small scoop to portion out heaping teaspoons of ganache. Roll each into a ball.
- Roll each ball in sanding sugar to coat thoroughly.
- Place the coated truffles on the prepared baking sheet and refrigerate for another hour to set.
