Description

These Blue Christmas Truffle Bites are an elegant no-bake holiday treat featuring creamy white chocolate and a hint of citrusy blue Curaçao, rolled in sparkling sanding sugar for a festive finish.


Ingredients

2 cups white chocolate chips

2 tablespoons heavy cream (35% or full-fat)

2 tablespoons blue Curaçao liqueur (or substitute with 1 tablespoon extra cream + blue food coloring + orange extract for alcohol-free version)

1/2 cup sanding sugar for coating


Instructions

  1. In a microwave-safe bowl, combine white chocolate chips and heavy cream.
  2. Microwave on medium power in 30-second intervals, stirring after each interval until smooth and melted.
  3. Stir in the blue Curaçao (or substitute) until the mixture is evenly tinted and smooth.
  4. Cover the bowl and refrigerate for about 2 hours, until the mixture is firm enough to shape.
  5. Line a baking sheet with parchment paper and pour sanding sugar into a shallow bowl.
  6. Use a teaspoon or small scoop to portion out heaping teaspoons of ganache. Roll each into a ball.
  7. Roll each ball in sanding sugar to coat thoroughly.
  8. Place the coated truffles on the prepared baking sheet and refrigerate for another hour to set.
