Ingredients
1 cup cottage cheese
3 large eggs
1/4 cup almond flour

1 tablespoon sweetener of choice (optional)
1 tablespoon coconut flour (optional for extra fluffiness)
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper or a silicone baking mat.
- In a medium bowl, whisk together the eggs and cottage cheese until smooth and well combined. Stir in the vanilla extract and sweetener if using.
- In a separate bowl, combine the almond flour, baking powder, coconut flour (if using), and salt.
- Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Do not overmix.
- Gently fold in the blueberries, being careful not to crush them.
- Spoon the batter into six small mounds on the prepared baking sheet, shaping them into round bread forms.
