Description

Bomboloni are soft, golden Italian donuts filled with creamy custard and dusted with sugar. Perfect for breakfast, dessert, or a sweet snack, these fried treats are irresistibly light and fluffy with a rich, indulgent filling.


Ingredients

3 cups (375 g) all-purpose flour

1/4 cup (50 g) sugar

2 tsp active dry yeast

3/4 cup (180 ml) warm milk

2 large eggs

1/4 cup (60 g) butter, softened

Oil for frying

Custard cream for filling

Powdered sugar for dusting


Instructions

  1. In a large bowl or stand mixer, combine the flour, sugar, and yeast.
  2. Add warm milk and eggs, mixing until a sticky dough forms.
  3. Add softened butter and knead the dough for 8–10 minutes until smooth and elastic.
  4. Cover and let the dough rise in a warm spot for 1 to 1.5 hours, until doubled in size.
  5. Punch down the dough, divide it into equal pieces, and shape each into a ball.
  6. Place on a floured surface, cover, and let rise again for 30–45 minutes.
  7. Heat oil in a heavy pot or deep fryer to 350°F (175°C).
  8. Fry the dough balls in batches, turning after 2–3 minutes until golden brown.
  9. Drain on paper towels and let cool slightly.
  10. Use a piping bag to fill each donut with custard through the side or top.
  11. Dust generously with powdered sugar and serve warm.

Notes

Try different fillings like Nutella, jam, or chocolate cream.

Add lemon zest to the dough for a citrusy flavor.

Bake instead of fry for a lighter version (texture will vary).

Add a splash of rum or vanilla extract to the dough for extra flavor.

Roll in cinnamon sugar for a different finish.
