Crispy on the outside and tender inside, these broccoli cheddar fritters combine chopped broccoli, sharp cheddar, and simple pantry ingredients into golden pan-fried bites. They make a flavorful snack, appetizer, or easy vegetable side dish.
Ingredients
1 cup finely chopped steamed broccoli
1/2 cup shredded cheddar cheese
1/4 cup breadcrumbs or all-purpose flour
1 egg
1/4 teaspoon garlic powder
Salt to taste
Black pepper to taste
Olive oil or avocado oil for cooking
Instructions
- Steam the broccoli until tender, then finely chop it and allow it to cool slightly.
- In a mixing bowl, combine the chopped broccoli, shredded cheddar cheese, breadcrumbs or flour, egg, garlic powder, salt, and black pepper.
- Mix until the ingredients are well incorporated and the mixture holds together.
- If the mixture seems too wet, add a little more breadcrumbs until it becomes easy to shape.
- Heat a thin layer of olive oil or avocado oil in a skillet over medium heat.
- Scoop 1 to 2 tablespoons of the mixture and gently flatten it into a small fritter directly in the pan.
- Cook for 3–4 minutes on each side until golden brown and crispy.
- Transfer the cooked fritters to a plate and allow them to cool slightly before serving.
Notes
Add grated parmesan cheese for extra savory flavor.
Mix in chopped green onions or parsley for freshness.
For a spicier version, add a pinch of chili flakes or smoked paprika.
For gluten-free fritters, replace breadcrumbs with gluten-free breadcrumbs or almond flour.
Store leftovers in an airtight container in the refrigerator for up to 3 days.
Reheat in a skillet or oven at 350°F (175°C) for 8–10 minutes to restore crispness.
If using frozen broccoli, thaw completely, drain excess moisture, and chop finely before mixing.
