Description

Crispy on the outside and tender inside, these broccoli cheddar fritters combine chopped broccoli, sharp cheddar, and simple pantry ingredients into golden pan-fried bites. They make a flavorful snack, appetizer, or easy vegetable side dish.


Ingredients

1 cup finely chopped steamed broccoli

1/2 cup shredded cheddar cheese

1/4 cup breadcrumbs or all-purpose flour

1 egg

1/4 teaspoon garlic powder

Salt to taste

Black pepper to taste

Olive oil or avocado oil for cooking


Instructions

  1. Steam the broccoli until tender, then finely chop it and allow it to cool slightly.
  2. In a mixing bowl, combine the chopped broccoli, shredded cheddar cheese, breadcrumbs or flour, egg, garlic powder, salt, and black pepper.
  3. Mix until the ingredients are well incorporated and the mixture holds together.
  4. If the mixture seems too wet, add a little more breadcrumbs until it becomes easy to shape.
  5. Heat a thin layer of olive oil or avocado oil in a skillet over medium heat.
  6. Scoop 1 to 2 tablespoons of the mixture and gently flatten it into a small fritter directly in the pan.
  7. Cook for 3–4 minutes on each side until golden brown and crispy.
  8. Transfer the cooked fritters to a plate and allow them to cool slightly before serving.

Notes

Add grated parmesan cheese for extra savory flavor.

Mix in chopped green onions or parsley for freshness.

For a spicier version, add a pinch of chili flakes or smoked paprika.

For gluten-free fritters, replace breadcrumbs with gluten-free breadcrumbs or almond flour.

Store leftovers in an airtight container in the refrigerator for up to 3 days.

Reheat in a skillet or oven at 350°F (175°C) for 8–10 minutes to restore crispness.

If using frozen broccoli, thaw completely, drain excess moisture, and chop finely before mixing.
