Description
Sweet and tangy pineapple chicken simmered in a rich, caramelized brown sugar glaze with soy sauce and garlic. This easy one-skillet meal is comforting, flavorful, and perfect served over warm rice.
Ingredients
4 boneless, skinless chicken thighs or breasts
1 tablespoon olive oil
1 cup pineapple chunks (fresh or canned, drained)
1/2 cup pineapple juice
1/3 cup brown sugar
2 tablespoons soy sauce
2 cloves garlic, minced
1/2 teaspoon ground ginger
Salt and pepper to taste
1 tablespoon cornstarch (optional, for thickening)
2 tablespoons water (optional, for thickening)
Fresh parsley or green onions for garnish (optional)
Instructions
- Season the chicken generously with salt and pepper on both sides.
- Heat olive oil in a large skillet over medium-high heat. Sear the chicken for 4–5 minutes per side until golden brown. Remove from the skillet and set aside.
- In the same skillet, add pineapple chunks, pineapple juice, brown sugar, soy sauce, minced garlic, and ground ginger. Stir well and bring to a gentle simmer.
- Return the chicken to the skillet, spoon sauce over the top, cover, and reduce heat to low. Cook for 15–20 minutes until the chicken reaches an internal temperature of 165°F (74°C) and is tender.
- If a thicker sauce is desired, mix cornstarch and water in a small bowl and stir into the skillet. Simmer for 2–3 minutes until the sauce thickens.
- Garnish with fresh parsley or green onions and serve warm over rice or with steamed vegetables.
Notes
Add sliced bell peppers or onions for extra texture and color.
For heat, sprinkle red pepper flakes or add a dash of sriracha.
Substitute part of the soy sauce with teriyaki sauce for deeper flavor.
Store leftovers in an airtight container in the refrigerator for up to 3–4 days.
Freeze in a freezer-safe container for up to 2 months and thaw overnight before reheating.
