Ingredients
2 lbs chicken wings (drums and flats), patted dry
Salt and pepper, to taste
1 tablespoon oil
1 cup pineapple juice (canned or fresh)
1/2 cup brown sugar (light or dark)
2 tablespoons soy sauce
1 tablespoon apple cider vinegar (or rice vinegar)
2 cloves garlic, minced
1/2 teaspoon ground ginger (or 1 teaspoon fresh grated ginger)
1 tablespoon cornstarch
2 tablespoons water (for slurry)
Optional: pinch of chili flakes or hot sauce
Optional garnish: sliced green onions, toasted sesame seeds, crushed pineapple
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with foil and a wire rack.
- Season wings with salt, pepper, and oil. Arrange on the rack in a single layer.
- Bake for 40–45 minutes, flipping halfway, until golden and crispy. (For air fryer: cook at 400°F for 20–25 minutes.)
- In a saucepan over medium heat, combine pineapple juice, brown sugar, soy sauce, vinegar, garlic, and ginger. Bring to a gentle simmer.
- Mix cornstarch and water to form a slurry. Stir into the sauce and cook 2–4 minutes until thick and glossy. Add chili flakes or hot sauce if desired.
- Toss cooked wings in the warm glaze until fully coated.
- Return glazed wings to the oven for 5–7 minutes or broil for 2–3 minutes for extra caramelization.
- Garnish as desired and serve warm.
Notes
Fully thaw and pat dry wings for maximum crispiness.
For thicker sauce, simmer longer or add a small amount of extra cornstarch slurry.
Wings can be baked ahead and glazed just before serving.
Store leftovers in an airtight container in the refrigerator for 3–4 days.
Reheat in oven at 350°F for 10–15 minutes or air fryer for 5–7 minutes to maintain crisp texture.
