Description
A creamy, crustless cheesecake with a caramelized top and a soft, custardy center. This Burnt Basque Cheesecake is baked in a loaf pan for a smaller, indulgent treat with minimal fuss and maximum flavor.
Ingredients
16 oz (450g) cream cheese, room temperature
3/4 cup (150g) granulated sugar
3 large eggs
1 cup (240ml) heavy cream
1/2 tsp fine sea salt
1/2 tsp vanilla extract
1 tbsp all-purpose flour
Instructions
- Preheat the oven to 400°F (205°C) and line a 9×5-inch loaf pan with parchment paper, leaving overhang for easy removal.
- In a large bowl, beat the cream cheese and sugar together until smooth and fluffy.
- Add the eggs one at a time, mixing well after each addition.
- Stir in the heavy cream, salt, and vanilla extract until well combined.
- Sift in the flour and gently fold it into the batter until fully incorporated with no lumps.
- Pour the batter into the prepared loaf pan and tap the pan gently on the counter to release any air bubbles.
- Bake for 45–50 minutes, until the top is deeply golden brown and the center is slightly jiggly.
- Remove from the oven and let cool at room temperature. Then refrigerate for at least 4 hours or overnight before serving.
Notes
Add 1 tsp lemon zest for a citrus twist.
Mix in 1 tbsp cooled espresso for mocha flavor.
Swirl in melted dark chocolate before baking for a marbled effect.
Swap vanilla extract with almond extract for a nutty undertone.
For individual servings, bake in ramekins and reduce the baking time.
Store in an airtight container in the fridge for up to 5 days.
Best served chilled or at room temperature. Let sit for 15 minutes before serving for best texture.
