Ingredients
6 cups Rice Chex cereal
1/2 cup creamy peanut butter
1/4 cup unsalted butter
1 cup semisweet chocolate chips
1/2 teaspoon vanilla extract
1/2 cup crushed Butterfinger candy bars (about 3 bars)
1 1/2 cups powdered sugar
Instructions
- Place the Rice Chex cereal in a large mixing bowl and set aside.
- In a medium saucepan, combine the peanut butter, unsalted butter, and chocolate chips over low heat.
- Stir continuously until melted and smooth.
- Remove from heat and stir in the vanilla extract.
- Pour the chocolate mixture over the cereal and gently stir until all pieces are evenly coated.
- Let the mixture cool slightly, then add the crushed Butterfinger bars and toss gently to avoid melting.
- Transfer the coated cereal into a large zip-top bag or container, add the powdered sugar, and shake until well coated.
- Spread the mixture on a parchment-lined baking sheet to cool completely before storing.
