Description

This Caprese Stuffed Avocado is a fresh, vibrant, and creamy twist on the classic Italian salad, combining ripe avocados with cherry tomatoes, fresh mozzarella, basil, and balsamic glaze for a simple and elegant dish.


Ingredients

2 ripe avocados, halved and pitted

1 cup cherry tomatoes, halved

½ cup fresh mozzarella balls (bocconcini or ciliegine), halved

Fresh basil leaves, chopped or torn

12 tbsp balsamic glaze

1 tbsp olive oil

Salt & pepper, to taste


Instructions

  1. In a bowl, combine cherry tomatoes, mozzarella, basil, olive oil, salt, and pepper; toss gently to coat.
  2. Using a spoon, scoop out some avocado flesh from each half to create space for the filling; optionally dice the scooped avocado and mix into the filling.
  3. Spoon the Caprese mixture into each avocado half.
  4. Drizzle balsamic glaze over the stuffed avocados.
  5. Serve immediately and enjoy fresh.

Notes

Add toasted pine nuts or walnuts for crunch.

Swap mozzarella for feta or burrata for a different flavor.

Use lemon or lime juice in the filling for extra brightness.

Add thinly sliced red onion or cucumber for texture.

Add crushed red pepper flakes or chili oil for spice.
