This Caprese Stuffed Avocado is a fresh, vibrant, and creamy twist on the classic Italian salad, combining ripe avocados with cherry tomatoes, fresh mozzarella, basil, and balsamic glaze for a simple and elegant dish.
Ingredients
2 ripe avocados, halved and pitted
1 cup cherry tomatoes, halved
½ cup fresh mozzarella balls (bocconcini or ciliegine), halved
Fresh basil leaves, chopped or torn
1–2 tbsp balsamic glaze
1 tbsp olive oil
Salt & pepper, to taste
Instructions
- In a bowl, combine cherry tomatoes, mozzarella, basil, olive oil, salt, and pepper; toss gently to coat.
- Using a spoon, scoop out some avocado flesh from each half to create space for the filling; optionally dice the scooped avocado and mix into the filling.
- Spoon the Caprese mixture into each avocado half.
- Drizzle balsamic glaze over the stuffed avocados.
- Serve immediately and enjoy fresh.
Notes
Add toasted pine nuts or walnuts for crunch.
Swap mozzarella for feta or burrata for a different flavor.
Use lemon or lime juice in the filling for extra brightness.
Add thinly sliced red onion or cucumber for texture.
