Ingredients
1½ cups graham cracker crumbs (or crushed digestive biscuits)
¼ cup granulated sugar
6 tablespoons unsalted butter, melted
2 medium apples (Granny Smith or Honeycrisp), peeled, cored, and diced
1 teaspoon cinnamon
1 tablespoon lemon juice
2 tablespoons brown sugar
16 oz (2 packages) cream cheese, softened
½ cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
½ cup caramel sauce (store-bought or homemade)

Instructions
- Preheat the oven to 325°F (165°C) and line a 9×13-inch baking pan with parchment paper or lightly grease it.
- In a bowl, combine graham cracker crumbs, ¼ cup granulated sugar, and melted butter. Mix until well blended, then press firmly into the bottom of the prepared pan.
- Bake the crust for 8–10 minutes. Remove and let cool slightly.
- In a bowl, toss diced apples with lemon juice, cinnamon, and brown sugar. Spread evenly over the baked crust.
- Beat softened cream cheese and ½ cup granulated sugar until smooth. Add eggs one at a time, beating well after each addition, then mix in vanilla extract.
- Pour the cheesecake mixture evenly over the apple layer.
- Bake for 40–45 minutes, until the edges are set and the center is slightly jiggly.
- Cool to room temperature, then refrigerate for at least 3 hours or overnight until fully set.
- Before serving, drizzle with caramel sauce and sprinkle with chopped pecans or walnuts if desired. Cut into squares and serve.
