Ingredients
1 cup whole wheat flour (or all-purpose flour)
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon ground ginger
1/4 teaspoon salt
1/3 cup coconut oil or melted butter
1/2 cup brown sugar or coconut sugar
2 large eggs
1 teaspoon vanilla extract
1 cup shredded carrots (about 2 medium carrots)
1/2 cup chopped walnuts or pecans (optional)
1/4 cup crushed pineapple, drained (optional)
1/4 cup raisins or dried cranberries (optional)
Instructions
- Preheat oven to 350°F (175°C). Lightly grease an 8×8 inch baking pan or line with parchment paper.
- In a medium bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt.
- In a large bowl, beat coconut oil (or butter) and brown sugar until smooth and creamy.
- Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
- Gradually add dry ingredients to wet ingredients, mixing until just combined.
- Fold in shredded carrots, nuts, pineapple, and dried fruit if using.
- Spread batter evenly into prepared baking pan.
- Bake for 25-30 minutes, until a toothpick inserted in the center comes out mostly clean with a few moist crumbs.
- Let cool completely before cutting into squares. Store in an airtight container.
Notes
Use all-purpose flour for a lighter texture or whole wheat for more nutrients and nuttiness.
Substitute butter or neutral oil if you don’t have coconut oil.
Omit nuts or replace with seeds for nut-free version.
