Description

Ingredients

2 slices whole-grain bread

1 tablespoon olive oil

1 clove garlic, minced

1/2 teaspoon smoked paprika

1/4 teaspoon ground cumin

1 cup canned white beans, rinsed and drained

1/4 cup vegetable broth

1/2 cup shredded cheddar cheese

salt to taste

black pepper to taste

1 tablespoon chopped fresh parsley

red pepper flakes (optional)


Instructions

  1. Heat olive oil in a small skillet over medium heat. Add minced garlic and sauté briefly until fragrant.
  2. Stir in smoked paprika and cumin, allowing the spices to bloom for a few seconds.
  3. Add white beans and vegetable broth. Gently mash some beans with the back of a spoon to create a creamy texture. Cook for a few minutes until heated through. Season with salt and black pepper.
  4. Toast the bread slices until golden and crisp.
  5. Spoon the warm bean mixture evenly over each slice of toast and sprinkle shredded cheddar cheese on top.
  6. Place under a broiler for 1–2 minutes until the cheese melts and becomes bubbly.
  7. Garnish with chopped parsley and optional red pepper flakes. Serve immediately.

Notes
