Description

These Cheesy Dynamite Chicken Buns feature soft, fluffy dough filled with spicy shredded chicken and melted cheese, topped with a golden, cheesy crust. Perfect as a main dish, snack, or appetizer, they’re comforting, flavorful, and freezer-friendly.


Ingredients

500g all-purpose flour

7g instant yeast

1 tbsp sugar

1 tsp salt

250ml warm milk

50ml vegetable oil

1 egg

300g cooked chicken breast, shredded

2 tbsp mayonnaise

1 tbsp hot sauce (like sriracha or sambal)

1 tsp garlic powder

1/2 tsp paprika

Salt and black pepper to taste

100g grated cheese (cheddar or mozzarella)

1 egg yolk (for brushing)

2 tbsp grated cheese (for topping)

Fresh parsley, chopped (optional)


Instructions

  1. In a large bowl, mix flour, yeast, sugar, and salt.
  2. Add warm milk, vegetable oil, and egg. Knead into a smooth, elastic dough for about 10 minutes by hand or 5 minutes in a stand mixer.
  3. Cover the bowl with a cloth and let the dough rise for 1 hour or until doubled in size.
  4. While the dough rises, mix shredded chicken with mayonnaise, hot sauce, garlic powder, paprika, salt, and black pepper. Stir in the grated cheese.
  5. Divide the risen dough into 10 equal portions.
  6. Flatten each dough ball, place a spoonful of filling in the center, and pinch edges to seal.
  7. Place buns seam-side down on a parchment-lined baking tray.
  8. Cover and let rise for another 20 minutes. Preheat oven to 180°C (350°F).
  9. Brush each bun with egg yolk, sprinkle with cheese, and optionally add chopped parsley.
  10. Bake for 20–25 minutes until golden brown and fragrant.

Notes

Use leftover or rotisserie chicken for convenience.

Mix cheddar and mozzarella for extra cheesy texture.

Adjust hot sauce to taste or swap with BBQ sauce for a smoky twist.

Add diced bell peppers or corn for extra crunch and sweetness.

Freeze individual buns for up to 2 months and reheat as needed.
