Description

A quick and indulgent grilled cheese sandwich featuring crispy garlic buttered bread, gooey melted cheese, and succulent shrimp, perfect for a special lunch or easy dinner.


Ingredients

2 tbsp unsalted butter, softened

2 cloves garlic, minced

1 tbsp fresh parsley, finely chopped (or 1 tsp dried)

Pinch of salt

4 slices thick bread (sourdough, Italian, or Texas toast)

1 cup cooked shrimp, peeled and chopped

1 cup shredded mozzarella (or mix with provolone/cheddar)

1/4 cup grated Parmesan cheese

Optional: red pepper flakes or squeeze of lemon juice


Instructions

  1. Make garlic butter: Mix softened butter, minced garlic, parsley, and a pinch of salt in a small bowl until smooth.
  2. Prep the bread: Spread garlic butter on one side of each bread slice; this will be the outside for toasting.
  3. Assemble sandwiches: On the unbuttered side of two slices, layer mozzarella, chopped shrimp, Parmesan, and optional red pepper flakes or lemon zest. Top with more mozzarella and place the second slice of bread on top, buttered side facing out.
  4. Cook: Heat a skillet over medium heat, add sandwiches, and cook 3–5 minutes per side, pressing gently until golden and crispy and the cheese is melted.
  5. Serve: Let sandwiches rest for 1–2 minutes, then slice and enjoy.

Notes

Swap shrimp for lobster or crab for a more decadent version.

Add marinara or pesto for extra flavor layers.

Use a cheese blend of provolone, cheddar, or gouda to vary the gooey factor.

Sprinkle red pepper flakes or drizzle hot sauce for spice.
