Ingredients
4 boneless, skinless chicken breasts
2 cups mushrooms, finely chopped
3 cloves garlic, minced
1 cup shredded mozzarella cheese
1/4 cup grated Parmesan cheese
3 tablespoons unsalted butter
1 tablespoon olive oil
1 teaspoon dried thyme
Salt and black pepper, to taste
Fresh parsley, chopped (for garnish)
Instructions
- Preheat oven to 375°F (190°C).
- In a skillet, heat olive oil and 1 tablespoon of butter over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
- Add chopped mushrooms and thyme, cooking until mushrooms are tender and any liquid has evaporated, about 5-7 minutes. Season with salt and pepper. Remove from heat and let cool slightly.
- Stir in mozzarella and Parmesan cheese into the mushroom mixture.
- Using a sharp knife, carefully cut a pocket into each chicken breast without slicing all the way through.
- Stuff each pocket generously with the mushroom and cheese mixture.
- In an oven-safe skillet, melt the remaining 2 tablespoons of butter over medium-high heat.
- Sear the stuffed chicken breasts for 3-4 minutes on each side until golden brown.
- Transfer the skillet to the oven and bake for 20-25 minutes, or until the chicken is cooked through and juices run clear.
- Garnish with chopped fresh parsley before serving.
Notes
For an extra flavor boost, you can add spinach to the mushroom mixture.
Experiment with different cheese blends such as cheddar or gouda for a new twist.
If you like it spicy, try adding red pepper flakes to the garlic butter sauce.
Boneless, skinless chicken thighs can be used as an alternative to chicken breasts for a richer taste.
