Ingredients
3 cups mashed potatoes (cooled)
1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
2 cloves garlic, minced
2 tablespoons fresh parsley, chopped
1/2 teaspoon salt
1/2 teaspoon black pepper
2 large eggs, beaten
1 cup all-purpose flour
1 1/2 cups breadcrumbs
Oil for frying
Instructions
- Place the cooled mashed potatoes in a large mixing bowl. Add the mozzarella, Parmesan, minced garlic, chopped parsley, salt, and black pepper. Mix until fully combined and smooth.
- Scoop 1 to 2 tablespoons of the mixture and roll into small balls. Place each ball on a parchment-lined baking sheet.
- Prepare a dredging station with three bowls: flour in the first, beaten eggs in the second, and breadcrumbs in the third.
- Roll each potato ball in flour, dip into the beaten eggs, and coat thoroughly with breadcrumbs.
- Heat oil in a deep skillet or pot to 350°F (175°C).
- Fry the potato balls in batches for 2 to 3 minutes, until golden brown and crispy.
- Remove with a slotted spoon and drain on a paper towel-lined plate.
- Serve warm with your favorite dipping sauce and garnish with extra parsley or Parmesan if desired.
Notes
Chill the breaded potato balls for 20–30 minutes before frying to help them hold their shape.
For extra cheesiness, stuff each ball with a small cube of mozzarella.
Bake at 400°F (200°C) for a lighter option, turning halfway through cooking.
Store leftovers in an airtight container in the refrigerator for up to 3 days.
Reheat in the oven or air fryer at 375°F (190°C) until hot and crispy.
Freeze uncooked, breaded potato balls and fry directly from frozen, adding 1–2 extra minutes to the cooking time.
