Description

This Cheesy Ground Beef and Rice Casserole is a comforting and hearty dish that combines savory ground beef, fluffy rice, and a deliciously melty cheese topping. Perfect for a cozy family dinner.


Ingredients

1 lb ground beef

1 onion, chopped

2 cloves garlic, minced

1 cup long-grain white rice, uncooked

2 cups beef broth

1 can (14.5 oz) diced tomatoes

1/2 cup sour cream

1 1/2 cups shredded cheddar cheese

Salt and pepper to taste

1 teaspoon dried oregano

1 teaspoon dried basil

1/2 teaspoon paprika


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, cook the ground beef over medium heat until browned, about 5-7 minutes. Drain any excess fat.
  3. Add the chopped onion and minced garlic, cooking for another 3-4 minutes until the onion is soft and fragrant.
  4. Stir in the uncooked rice, beef broth, diced tomatoes (with juice), oregano, basil, paprika, salt, and pepper. Simmer for about 10 minutes until the liquid absorbs into the rice.
  5. Remove from heat and stir in the sour cream and 1 cup of shredded cheddar cheese.
  6. Transfer the mixture to a greased 9×13-inch baking dish and sprinkle the remaining 1/2 cup of cheddar cheese over the top.
  7. Cover with aluminum foil and bake for 20 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
  8. Let cool for a few minutes before serving.

Notes

If using brown rice, adjust the beef broth and cooking time accordingly.

This casserole can be made ahead of time and refrigerated for up to 24 hours before baking.

Can be frozen before baking for up to 3 months. Add extra baking time if cooking from frozen.

For a spicier version, add jalapeños or hot sauce.

Try using different cheeses, like mozzarella, for a different flavor.
