These Cheesy Ranch Oven Roasted Potatoes are crispy, cheesy, and full of flavor thanks to ranch seasoning. They’re an easy, crowd-pleasing side dish perfect for weeknight dinners or gatherings.
Ingredients
2 lbs baby potatoes (or Yukon gold/red), cut into bite-sized chunks
2–3 tbsp olive oil
1 packet ranch seasoning mix (1 oz)
1½ cups shredded cheddar cheese (or cheese blend)
2 tbsp chopped fresh parsley or green onions (optional, for garnish)
Salt & pepper to taste
Instructions
- Preheat the oven to 400°F (200°C) and line a large baking sheet with parchment paper or foil.
- In a large bowl, toss the potato chunks with olive oil, ranch seasoning, salt, and pepper until evenly coated.
- Spread the potatoes out on the prepared baking sheet in a single layer.
- Roast for 25–30 minutes, flipping halfway through, until golden brown and fork-tender.
- Sprinkle shredded cheese evenly over the roasted potatoes and return to the oven for 5–7 minutes until melted and bubbly.
- Garnish with chopped parsley or green onions and serve hot.
Notes
Add crushed red pepper flakes or jalapeños for a spicy version.
Top with bacon and sour cream for a loaded twist.
