Ingredients
2 chicken breasts, sliced
2 tablespoons olive oil
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
Salt and pepper to taste
8 oz fettuccine pasta
2 tablespoons butter
2 cloves garlic, minced
1 cup mushrooms, sliced
3 cups fresh spinach
1 cup heavy cream
1/2 cup grated Parmesan cheese
1/4 cup fresh parsley, chopped (optional)
Instructions
- Cook the fettuccine pasta according to the package instructions. Once done, drain and set aside.
- Heat olive oil in a large skillet over medium heat. Season the chicken with garlic powder, onion powder, salt, and pepper. Cook the chicken for 5-7 minutes per side, or until fully cooked and golden brown. Remove the chicken from the skillet and set aside.
- In the same skillet, melt butter over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
- Add the sliced mushrooms to the skillet and cook for 4-5 minutes until softened and browned.
- Stir in the spinach and cook for 2-3 minutes, until wilted.
- Pour in the heavy cream and bring the mixture to a simmer. Stir in the grated Parmesan cheese and cook for another 3-4 minutes until the sauce thickens.
- Add the cooked chicken and pasta to the skillet, tossing everything together to coat in the creamy sauce.
- Garnish with fresh parsley, if desired, and serve hot.
