Ingredients

2 chicken breasts, sliced

2 tablespoons olive oil

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper to taste

8 oz fettuccine pasta

2 tablespoons butter

2 cloves garlic, minced

1 cup mushrooms, sliced

3 cups fresh spinach

1 cup heavy cream

1/2 cup grated Parmesan cheese

1/4 cup fresh parsley, chopped (optional)


Instructions

  1. Cook the fettuccine pasta according to the package instructions. Once done, drain and set aside.
  2. Heat olive oil in a large skillet over medium heat. Season the chicken with garlic powder, onion powder, salt, and pepper. Cook the chicken for 5-7 minutes per side, or until fully cooked and golden brown. Remove the chicken from the skillet and set aside.
  3. In the same skillet, melt butter over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  4. Add the sliced mushrooms to the skillet and cook for 4-5 minutes until softened and browned.
  5. Stir in the spinach and cook for 2-3 minutes, until wilted.
  6. Pour in the heavy cream and bring the mixture to a simmer. Stir in the grated Parmesan cheese and cook for another 3-4 minutes until the sauce thickens.
  7. Add the cooked chicken and pasta to the skillet, tossing everything together to coat in the creamy sauce.
  8. Garnish with fresh parsley, if desired, and serve hot.
