Description

A light, healthy, and low-carb meal featuring shredded chicken, creamy avocado, Greek yogurt, and fresh vegetables wrapped in crisp lettuce leaves.


Ingredients

2 large chicken breasts, cooked and shredded

1 ripe avocado, mashed

1/4 cup Greek yogurt

1 tablespoon lime juice

1 tablespoon cilantro, chopped

1/2 teaspoon cumin

Salt and pepper to taste

8 large lettuce leaves (romaine or butter lettuce)

1/2 cup diced cucumber

1/2 cup diced tomato

1/4 cup red onion, finely chopped


Instructions

  1. In a large bowl, combine the shredded chicken, mashed avocado, Greek yogurt, lime juice, cilantro, cumin, salt, and pepper. Stir until everything is well combined and creamy.
  2. Prepare the lettuce leaves by washing them and patting them dry with paper towels.
  3. Place a spoonful of the chicken avocado mixture in the center of each lettuce leaf.
  4. Add a little diced cucumber, tomato, and red onion on top of the chicken mixture.
  5. Roll up the lettuce leaves tightly, folding in the sides as you go to secure the filling inside.
  6. Repeat the process with the remaining lettuce leaves and chicken mixture.
  7. Serve immediately, or refrigerate until ready to enjoy.

Notes

Best enjoyed fresh, but can be stored in the fridge for up to a day in an airtight container.

Wrap the rolls just before serving to avoid soggy lettuce.

Grilled chicken can be used for added flavor.

For spiciness, add diced jalapeƱos or hot sauce.
