Ingredients

2 lbs chicken breast, cut into 1-inch cubes

1 red bell pepper, cut into 1-inch pieces

1 yellow bell pepper, cut into 1-inch pieces

1 zucchini, sliced into thick rounds

1 onion, cut into wedges

2 tablespoons olive oil

1 tablespoon lemon juice

1 teaspoon garlic powder

1 teaspoon paprika

1 teaspoon dried oregano

Salt and pepper, to taste

Instructions

In a bowl, combine the olive oil, lemon juice, garlic powder, paprika, oregano, salt, and pepper. Stir well to make the marinade.
Add the chicken cubes to the marinade and toss until evenly coated. Let the chicken marinate in the fridge for at least 30 minutes.
Preheat your grill or grill pan over medium-high heat.
Thread the chicken pieces, bell peppers, zucchini, and onion onto the skewers, alternating between chicken and vegetables.
Grill the skewers for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has an internal temperature of 165°F (74°C), and the vegetables are slightly charred.
Serve hot, with your favorite dipping sauce or alongside a fresh salad.
