Description

This Chicken Stir-Fry Noodles recipe combines tender chicken, vibrant veggies, and flavorful noodles in a savory sauce, perfect for a quick and easy weeknight meal.


Ingredients

2 chicken breasts, thinly sliced

8 oz noodles (rice noodles, udon, or egg noodles)

1 tablespoon olive oil

1 bell pepper, thinly sliced

1 carrot, julienned

1 cup broccoli florets

2 cloves garlic, minced

1 tablespoon fresh ginger, grated

3 tablespoons soy sauce

2 tablespoons oyster sauce

1 tablespoon sesame oil

1 tablespoon honey or sugar

1 teaspoon chili paste (optional, for spice)

2 green onions, chopped (for garnish)

Sesame seeds (for garnish)


Instructions

  1. Cook noodles according to the package instructions, drain, and set aside.
  2. Heat olive oil in a large skillet or wok over medium-high heat. Add the sliced chicken and cook for 5-7 minutes until golden brown and cooked through. Remove from the pan and set aside.
  3. In the same pan, add a little more oil if necessary. Add the bell pepper, carrot, and broccoli. Stir-fry for 3-4 minutes, until vegetables are tender-crisp.
  4. Add the minced garlic and grated ginger to the pan, and stir-fry for another minute until fragrant.
  5. In a small bowl, whisk together the soy sauce, oyster sauce, sesame oil, honey, and chili paste (if using).
  6. Add the cooked noodles to the pan with the vegetables, followed by the chicken. Pour the sauce mixture over the top and toss everything together until well-coated and heated through.
  7. Garnish with green onions and sesame seeds before serving.

Notes

For a vegetarian option, swap the chicken with tofu or tempeh.

Feel free to use different vegetables such as zucchini, snap peas, or mushrooms.

To make the dish spicier, add more chili paste or red pepper flakes.

Leftovers can be stored in an airtight container in the fridge for up to 3 days.

Reheat the stir-fry in a skillet or wok with a splash of water or broth to prevent noodles from drying out.
