Description
Smoky, spicy, and juicy chipotle chicken perfect for tacos, bowls, salads, or burritos, infused with chipotle peppers, smoked paprika, and fresh lime juice for bold flavor.
Ingredients
2 lbs chicken thighs (or breasts)
2 tbsp olive oil
2 tbsp chipotle peppers in adobo sauce (chopped)
2 tsp smoked paprika
1 tsp garlic powder
1 tsp onion powder
1 tsp ground cumin
½ tsp dried oregano
Juice of 1 lime
Salt & pepper to taste
Instructions
- In a bowl, combine olive oil, chopped chipotle peppers in adobo sauce, smoked paprika, garlic powder, onion powder, ground cumin, dried oregano, lime juice, salt, and pepper. Mix well.
- Add the chicken and coat thoroughly. Marinate for at least 30 minutes, preferably overnight for best flavor.
- Choose a cooking method:
- Grill: Preheat grill to medium-high heat, cook chicken 5-6 minutes per side until charred and cooked through.
- Stovetop: Heat a pan over medium heat, cook chicken 5-7 minutes per side until golden brown and cooked through.
- Oven: Preheat oven to 400°F (200°C), bake chicken on a baking sheet for 25-30 minutes until fully cooked.
- Let the chicken rest for about 5 minutes before slicing to keep it juicy and tender.
- Serve with rice, tortillas, or fresh salad.
Notes
Marinate overnight for maximum flavor.
Can substitute chicken breasts for thighs but watch cooking time to avoid drying out.
Optional: Add honey or brown sugar to marinade for sweetness.
Leftovers keep in fridge up to 3 days; reheat gently for best results.
Freezes well for up to 2 months when wrapped tightly.
