Description

Smoky, spicy, and juicy chipotle chicken perfect for tacos, bowls, salads, or burritos, infused with chipotle peppers, smoked paprika, and fresh lime juice for bold flavor.


Ingredients

2 lbs chicken thighs (or breasts)

2 tbsp olive oil

2 tbsp chipotle peppers in adobo sauce (chopped)

2 tsp smoked paprika

1 tsp garlic powder

1 tsp onion powder

1 tsp ground cumin

½ tsp dried oregano

Juice of 1 lime

Salt & pepper to taste


Instructions

  1. In a bowl, combine olive oil, chopped chipotle peppers in adobo sauce, smoked paprika, garlic powder, onion powder, ground cumin, dried oregano, lime juice, salt, and pepper. Mix well.
  2. Add the chicken and coat thoroughly. Marinate for at least 30 minutes, preferably overnight for best flavor.
  3. Choose a cooking method:
  4. Grill: Preheat grill to medium-high heat, cook chicken 5-6 minutes per side until charred and cooked through.
  5. Stovetop: Heat a pan over medium heat, cook chicken 5-7 minutes per side until golden brown and cooked through.
  6. Oven: Preheat oven to 400°F (200°C), bake chicken on a baking sheet for 25-30 minutes until fully cooked.
  7. Let the chicken rest for about 5 minutes before slicing to keep it juicy and tender.
  8. Serve with rice, tortillas, or fresh salad.

Notes

Marinate overnight for maximum flavor.

Can substitute chicken breasts for thighs but watch cooking time to avoid drying out.

Optional: Add honey or brown sugar to marinade for sweetness.

Leftovers keep in fridge up to 3 days; reheat gently for best results.
