Description

Ingredients

1 1/2 cups all-purpose flour

1/2 cup cocoa powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 cup butter, softened

1/2 cup sugar

1/4 cup brown sugar, packed

1 egg

1 teaspoon vanilla extract

1/2 cup peanut butter (creamy or chunky)

1/4 cup powdered sugar

1/4 teaspoon salt


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt. Set aside.
  3. In a large bowl, cream together the butter, sugar, and brown sugar until light and fluffy, about 2-3 minutes.
  4. Beat in the egg and vanilla extract until well combined.
  5. Gradually add the dry ingredients to the wet ingredients and mix until fully combined.
  6. In a separate bowl, mix the peanut butter, powdered sugar, and salt until smooth.
  7. Scoop about 1 tablespoon of cookie dough and flatten it slightly. Place 1 teaspoon of the peanut butter mixture in the center and then wrap the dough around the peanut butter to form a ball.
  8. Place the cookie dough balls on a baking sheet, spacing them about 2 inches apart.
  9. Bake for 8-10 minutes, or until the cookies are set but still soft in the center.
  10. Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

Add chocolate chips for extra chocolatey goodness.

Use crunchy peanut butter instead of creamy for a different texture.

Try almond or cashew butter as substitutes for peanut butter.
