Description

Soft and buttery slice-and-bake cookies swirled with sweet cinnamon sugar and topped with a light vanilla glaze, bringing all the cozy flavors of a classic cinnamon roll in an easy cookie form.


Ingredients

1 cup unsalted butter, softened

1 cup granulated sugar

1 large egg

1 teaspoon vanilla extract

2¾ cups all-purpose flour

1 teaspoon baking powder

½ teaspoon salt

½ cup brown sugar, packed

2 tablespoons ground cinnamon

1 cup powdered sugar

12 tablespoons milk

½ teaspoon vanilla extract (for glaze)


Instructions

  1. In a large bowl, beat the softened butter and granulated sugar together until creamy.
  2. Add the egg and vanilla extract and mix until fully incorporated.
  3. In a separate bowl, whisk together the flour, baking powder, and salt.
  4. Gradually add the dry ingredients to the wet mixture, mixing just until combined.
  5. In a small bowl, mix the brown sugar and ground cinnamon for the swirl.
  6. Roll the dough into a 12×8-inch rectangle between two sheets of parchment paper.
  7. Sprinkle the cinnamon sugar mixture evenly over the dough.
  8. Starting from the long side, tightly roll the dough into a log. Wrap and chill for 30 minutes.
  9. Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  10. Slice the chilled log into ½-inch thick cookies and place on prepared baking sheets.
  11. Bake for 12–15 minutes, or until edges are lightly golden. Cool completely.
  12. Mix powdered sugar, vanilla extract, and enough milk to create a smooth glaze. Drizzle over cooled cookies.

Notes

Chilling the dough helps maintain the swirl shape and makes slicing easier.

Add chopped pecans or walnuts for extra crunch.

Raisins can be mixed into the cinnamon sugar for added texture.

A pinch of nutmeg or cardamom enhances the warm spice flavor.

Store in an airtight container at room temperature for up to 3 days or freeze for up to 2 months.
