Ingredients
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
2/3 cup granulated sugar
4 tablespoons unsalted butter, softened
2 large eggs
1 1/2 cups mashed ripe bananas
1/3 cup plain Greek yogurt or sour cream
1 teaspoon vanilla extract
1/3 cup brown sugar
1 tablespoon ground cinnamon
Instructions
- Preheat the oven to 350°F (175°C) and lightly grease a standard loaf pan.
- In a medium bowl, whisk together the flour, baking soda, ground cinnamon, and salt.
- In a large bowl, beat the butter and granulated sugar until light and creamy.
- Add the eggs one at a time, mixing well after each addition.
- Stir in the mashed bananas, Greek yogurt or sour cream, and vanilla extract until smooth.
- Gradually fold the dry ingredients into the wet mixture until just combined.
- In a small bowl, mix the brown sugar and cinnamon for the swirl.
- Pour half of the batter into the prepared pan and spread evenly. Sprinkle half of the cinnamon mixture on top.
- Add the remaining batter and top with the remaining cinnamon mixture. Use a knife to gently swirl.
- Bake for 50 to 60 minutes, or until a toothpick inserted in the center comes out clean.
- Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Notes
Add 1/2 to 3/4 cup chopped nuts or chocolate chips for variation.
Use sour cream for a richer texture or Greek yogurt for a lighter option.
A pinch of nutmeg can enhance the cinnamon flavor.
Store at room temperature for up to 3 days or refrigerate for up to 1 week.
Freeze slices or whole loaf for up to 3 months.
Reheat slices in the microwave for 10–15 seconds or toast lightly.
