Ingredients

1 cup natural peanut butter (creamy or crunchy)

1/2 cup maple syrup or honey

1 1/2 cups rolled oats

1/2 cup dark chocolate chips (optional topping)


Instructions

  1. Line a muffin tin with paper liners or lightly grease it to prevent sticking.
  2. In a medium saucepan over low heat, melt the peanut butter and maple syrup (or honey), stirring frequently until smooth and combined.
  3. Remove from heat and stir in the rolled oats until evenly coated.
  4. Spoon the mixture into the muffin tin, pressing down gently to flatten the tops.
  5. Melt the chocolate chips (if using) and drizzle or spread over each oat cup.
  6. Place the muffin tin in the freezer for 30 to 40 minutes, until the oat cups are firm.
  7. Transfer to an airtight container and store in the fridge or freezer.

Notes

Use almond or cashew butter instead of peanut butter for a flavor variation.

Add chopped nuts or shredded coconut for more texture.

Sprinkle sea salt on top for a salty-sweet finish.
