Description

Ingredients

2 ¾ cups (344 g) all-purpose flour

1 tsp baking soda

1 tsp baking powder

½ tsp salt

1 cup (227 g) unsalted butter, room temperature

1 ¼ cups (250 g) granulated sugar

1 large egg, room temperature

1 egg yolk, room temperature

3 tsp vanilla extract

½ cup (100 g) extra granulated sugar (for rolling)


Instructions

  1. Preheat oven to 350 °F (175 °C) and line baking sheets with parchment paper or silicone mats.
  2. In a medium bowl, whisk together the flour, baking soda, baking powder, and salt; set aside.
  3. In a large bowl, cream the butter and granulated sugar until light and fluffy.
  4. Add the egg, egg yolk, and vanilla extract; beat until well combined.
  5. Gradually mix in the dry ingredients on low speed until a soft dough forms.
  6. Scoop about 3 tablespoons of dough per cookie, roll into balls, and coat in the extra granulated sugar.
  7. Place dough balls on prepared baking sheets with space between each.
  8. Bake for 11–12 minutes, until edges are set and centers look slightly underbaked.
  9. Let cookies rest on the pan for 2 minutes before transferring to a wire rack to cool completely.
