Description

A moist and tender banana bread layered with a buttery cinnamon streusel and topped with a light vanilla glaze, perfect for breakfast, brunch, or a cozy afternoon treat.


Ingredients

3 ripe bananas, mashed

1/2 cup (115 g) unsalted butter, melted

1 cup (200 g) granulated sugar

2 large eggs

1 tsp vanilla extract

1 1/2 cups (190 g) all-purpose flour

1 tsp baking soda

1/2 tsp salt

1/2 tsp cinnamon (optional)

1/2 cup (100 g) brown sugar

1/3 cup (40 g) all-purpose flour (for streusel)

1 tsp cinnamon (for streusel)

1/4 cup (55 g) unsalted butter, softened

1/2 cup (60 g) powdered sugar

12 tbsp milk

1/2 tsp vanilla extract (for glaze)


Instructions

  1. Preheat oven to 350°F (175°C). Grease and line a 9×5-inch loaf pan with parchment paper.
  2. Prepare the streusel by combining brown sugar, flour, and cinnamon in a bowl. Cut in softened butter until crumbly. Set aside.
  3. In a large bowl, mix mashed bananas with melted butter. Stir in sugar, eggs, and vanilla extract until smooth.
  4. In a separate bowl, whisk together flour, baking soda, salt, and cinnamon.
  5. Gradually add dry ingredients to wet ingredients and mix just until combined.
  6. Pour half the batter into the loaf pan and sprinkle with half the streusel. Add remaining batter and top with remaining streusel.
  7. Bake for 55–65 minutes, or until a toothpick inserted in the center comes out clean.
  8. Cool in the pan for 30–45 minutes before removing.
  9. Prepare glaze by mixing powdered sugar, milk, and vanilla extract until smooth.
  10. Drizzle glaze over cooled bread, slice, and serve.

Notes

Store in an airtight container at room temperature for up to 3 days or refrigerate for up to 1 week.

Freeze individual slices tightly wrapped for up to 3 months.

Reheat slices in the microwave for 15–20 seconds or in a 300°F (150°C) oven for 10 minutes.

Add 1/2 cup chopped walnuts or pecans for extra crunch.

Avoid overmixing the batter to keep the bread soft and tender.
