Description

A fresh and vibrant Corn Feta Salad combining sweet corn, tangy feta, and crisp vegetables tossed in a light lemon vinaigrette. Perfect as a quick lunch or colorful side dish.


Ingredients

3 cups fresh or frozen corn kernels (if frozen, thawed)

1 cup cherry tomatoes, halved

1 cucumber, diced

1/2 red onion, finely chopped

1/2 cup feta cheese, crumbled

1/4 cup fresh cilantro or parsley, chopped

Juice of 1 lemon

2 tablespoons olive oil

Salt and pepper to taste


Instructions

  1. In a large bowl, combine the corn, cherry tomatoes, cucumber, red onion, and feta cheese.
  2. In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper until well combined.
  3. Pour the dressing over the salad and toss gently to coat all ingredients evenly.
  4. Garnish with chopped cilantro or parsley before serving.
  5. Serve chilled or at room temperature as preferred.

Notes

Can add diced avocado for creaminess or fresh mint for a different flavor.

Grilled chicken or chickpeas can add more protein.
