Description

A cozy and comforting apple fritter-inspired loaf layered with cinnamon sugar apples, soft vanilla-scented batter, and topped with a sweet glaze that melts into every slice.


Ingredients

2 medium apples, peeled and chopped (Granny Smith or Honeycrisp)

2 tbsp granulated sugar

1 tsp ground cinnamon

1/3 cup light brown sugar, packed

1/2 cup unsalted butter, softened

2/3 cup granulated sugar

2 large eggs

1 1/2 tsp vanilla extract

1 1/2 cups all-purpose flour

1 3/4 tsp baking powder

1/2 cup milk

1/3 cup brown sugar (for cinnamon swirl)

1 tsp ground cinnamon (for cinnamon swirl)

1/2 cup powdered sugar (for glaze)

12 tsp milk or cream (for glaze)

Splash of vanilla extract (optional, for glaze)


Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.
  2. In a bowl, toss the chopped apples with 2 tbsp granulated sugar and 1 tsp cinnamon. Set aside.
  3. In a large bowl, cream the softened butter with granulated sugar and brown sugar until light and fluffy.
  4. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
  5. In a separate bowl, whisk together flour and baking powder.
  6. Gradually add the dry ingredients to the wet mixture, alternating with milk, mixing just until combined.
  7. Pour half of the batter into the prepared pan. Top with half of the apple mixture and gently press into the batter. Sprinkle half of the cinnamon swirl mixture over the apples.
  8. Repeat layering with remaining batter, apples, and cinnamon swirl.
  9. Bake for 55–65 minutes, or until a toothpick inserted into the center comes out clean.
  10. Cool in the pan for 10 minutes, then transfer to a wire rack.
  11. Whisk powdered sugar with milk and vanilla until smooth. Drizzle over warm (not hot) bread before serving.

Notes

Use firm apples so they hold their shape during baking.

Avoid overmixing the batter to keep the bread soft and tender.

Add chopped walnuts or pecans for extra crunch.

Store in an airtight container at room temperature for up to 3 days.

Freeze individual slices wrapped tightly for longer storage.
