Cowboy Cornbread Casserole is a hearty and comforting dish made with ground beef, beans, corn, and a fluffy cornbread topping, perfect for family dinners or gatherings.
Ingredients
1 lb ground beef
1 onion, chopped
1 bell pepper, chopped
1 can (15 oz) black beans, drained and rinsed
1 can (15 oz) corn, drained
1 can (10 oz) diced tomatoes with green chilies
1 packet taco seasoning
1 cup shredded cheddar cheese
1 box cornbread mix (8.5 oz)
1 egg
1/3 cup milk
1/4 cup melted butter
Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C).
- In a large skillet, brown the ground beef over medium heat, breaking it apart as it cooks. Drain any excess fat.
- Add the chopped onion and bell pepper to the skillet and cook for 3-4 minutes, until softened.
- Stir in the taco seasoning, black beans, corn, and diced tomatoes with green chilies. Let it simmer for 5-7 minutes, then remove from heat and set aside.
- In a separate bowl, prepare the cornbread mix according to the package instructions, adding the egg, milk, and melted butter. Stir until just combined.
- Grease a 9×13-inch baking dish, then layer the beef mixture at the bottom. Spread the prepared cornbread batter on top of the beef mixture, smoothing it evenly.
- Sprinkle the shredded cheddar cheese over the cornbread layer.
- Bake for 25-30 minutes, or until the cornbread is golden brown and cooked through. Allow the casserole to cool for a few minutes before serving.
Notes
To make it spicier, add sliced jalapeños or hot sauce to the beef mixture.
For a vegetarian version, swap the ground beef for a plant-based meat alternative or add extra beans and vegetables.
Add a bit of sugar to the cornbread mix for a touch of sweetness if desired.
The casserole can be stored in the fridge for 3-4 days and reheated in the microwave or oven.
You can assemble the casserole ahead of time and refrigerate it for up to 24 hours before baking.
