Description

Cowboy Cornbread Casserole is a hearty and comforting dish made with ground beef, beans, corn, and a fluffy cornbread topping, perfect for family dinners or gatherings.


Ingredients

1 lb ground beef

1 onion, chopped

1 bell pepper, chopped

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) corn, drained

1 can (10 oz) diced tomatoes with green chilies

1 packet taco seasoning

1 cup shredded cheddar cheese

1 box cornbread mix (8.5 oz)

1 egg

1/3 cup milk

1/4 cup melted butter

Salt and pepper to taste


Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large skillet, brown the ground beef over medium heat, breaking it apart as it cooks. Drain any excess fat.
  3. Add the chopped onion and bell pepper to the skillet and cook for 3-4 minutes, until softened.
  4. Stir in the taco seasoning, black beans, corn, and diced tomatoes with green chilies. Let it simmer for 5-7 minutes, then remove from heat and set aside.
  5. In a separate bowl, prepare the cornbread mix according to the package instructions, adding the egg, milk, and melted butter. Stir until just combined.
  6. Grease a 9×13-inch baking dish, then layer the beef mixture at the bottom. Spread the prepared cornbread batter on top of the beef mixture, smoothing it evenly.
  7. Sprinkle the shredded cheddar cheese over the cornbread layer.
  8. Bake for 25-30 minutes, or until the cornbread is golden brown and cooked through. Allow the casserole to cool for a few minutes before serving.

Notes

To make it spicier, add sliced jalapeños or hot sauce to the beef mixture.

For a vegetarian version, swap the ground beef for a plant-based meat alternative or add extra beans and vegetables.

Add a bit of sugar to the cornbread mix for a touch of sweetness if desired.

The casserole can be stored in the fridge for 3-4 days and reheated in the microwave or oven.

You can assemble the casserole ahead of time and refrigerate it for up to 24 hours before baking.
