Description

These Cowboy Mushrooms are a savory, smoky side dish made with button or cremini mushrooms, butter, garlic, Worcestershire sauce, and soy sauce. They are seared to perfection in a skillet, with optional bourbon or hot sauce for an extra bold kick.


Ingredients

1 ½ pounds (680g) button or cremini mushrooms, cleaned and halved (or quartered if large)

3 tablespoons butter

1 tablespoon olive oil

4 cloves garlic, minced

1 tablespoon Worcestershire sauce

1 tablespoon soy sauce (or tamari for gluten-free)

1 teaspoon smoked paprika

1/4 teaspoon crushed red pepper flakes (optional, for heat)

1/2 teaspoon black pepper

Salt, to taste

Optional: 1–2 teaspoons bourbon or hot sauce for extra cowboy flair

Fresh parsley or chives, for garnish


Instructions

  1. Clean mushrooms with a damp cloth or paper towel—don’t soak them. Trim the stems if needed.
  2. Heat butter and olive oil in a large skillet (cast iron is ideal) over medium-high heat. Add mushrooms in a single layer (work in batches if needed) and let them sear undisturbed for 3–4 minutes to get a good brown crust.
  3. Stir in the minced garlic and cook for 1 minute. Then, add Worcestershire sauce, soy sauce, smoked paprika, crushed red pepper flakes, black pepper, and a pinch of salt.
  4. If you’re feeling adventurous, splash in bourbon or hot sauce and let it sizzle for about 30 seconds.
  5. Let the mushrooms cook for another 3–5 minutes, stirring occasionally, until they’re deeply browned and glazed in the sauce.
  6. Taste and adjust the seasoning. Garnish with fresh chopped parsley or chives before serving.

Notes

For a gluten-free version, swap soy sauce with tamari.

Add some fresh thyme or rosemary for a fragrant twist.

Increase the smoked paprika or add a touch of liquid smoke for a smokier flavor.

For more heat, bump up the crushed red pepper flakes or add hot sauce.

Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in a skillet over medium heat, adding a splash of water or broth to bring back the sauce.
