Description

Ingredients

1 lb ground beef (or substitute sausage)

16 oz Velveeta cheese, cubed

1 can (10 oz) Rotel diced tomatoes & green chilies (undrained)


Instructions

  1. In a large skillet over medium heat, brown the ground beef until fully cooked. Drain any excess grease.
  2. Reduce heat to low and add the cubed Velveeta cheese and the entire can of Rotel, including the juice.
  3. Stir continuously until the cheese is melted and the mixture is smooth and creamy.
  4. Serve the dip warm with tortilla chips, crackers, or fresh-cut vegetables.

Notes

Use spicy sausage or hot Rotel for extra heat.

Add black beans or corn for more texture and volume.
