Description

This creamy avocado grilled cheese is a fresh and flavorful twist on a classic sandwich. Buttery toasted bread, rich mashed avocado, and gooey melted cheese create a quick, satisfying meal with a hint of citrus brightness.


Ingredients

2 slices of bread (sourdough, whole wheat, or preferred kind)

1 ripe avocado

1 tbsp mayonnaise (optional)

1 tsp lime or lemon juice

Salt and pepper, to taste

23 slices of cheese (cheddar, mozzarella, or pepper jack)

1 tbsp butter


Instructions

  1. Mash the avocado in a small bowl with mayonnaise (if using), lime or lemon juice, salt, and pepper. Leave it slightly chunky for texture.
  2. Spread the avocado mixture on one slice of bread, then layer the cheese on top and close with the second slice of bread.
  3. Heat a skillet over medium heat and melt the butter. Place the sandwich in the skillet and cook for 3–4 minutes per side, until golden brown and the cheese has melted.
  4. Remove from skillet, slice in half, and serve immediately while warm.

Notes

Use plant-based cheese and butter for a vegan version.

Add sliced tomato or crispy bacon for extra flavor.

Spice it up with pepper jack cheese or a dash of hot sauce.

Sprinkle in chili flakes or herbs for added punch.

Best enjoyed fresh, but can be stored in the fridge for 1 day.

Reheat in a skillet or toaster oven for best results.
