Ingredients
2 chicken breasts, boneless and skinless, cut into bite-sized pieces
8 oz fettuccine or pasta of choice
1 tablespoon olive oil
3 cloves garlic, minced
1 cup heavy cream
1 cup chicken broth
1/2 cup grated Parmesan cheese
Salt and pepper to taste
Fresh parsley, chopped, for garnish
Instructions
- Cook the pasta according to package instructions. Drain and set aside.
- Heat olive oil in a large skillet over medium heat. Add the chicken pieces and season with salt and pepper. Cook for 5-7 minutes, or until the chicken is cooked through and browned. Remove the chicken from the skillet and set aside.
- In the same skillet, add the minced garlic and sauté for 1-2 minutes until fragrant.
- Add the chicken broth and heavy cream to the skillet. Stir to combine, scraping any browned bits from the bottom of the pan.
- Bring the mixture to a simmer and cook for 3-4 minutes, until it thickens slightly.
- Stir in the Parmesan cheese and cooked chicken, and let the sauce simmer for another 2-3 minutes.
- Add the cooked pasta to the skillet and toss to coat in the creamy sauce.
- Garnish with fresh parsley before serving.
Notes
If you have leftovers, store the creamy chicken pasta in an airtight container in the fridge for up to 3 days.
To reheat, warm it up on the stovetop over medium heat, adding a splash of chicken broth or cream if needed to loosen the sauce.
