Description
A creamy garlic mushroom chicken linguine with juicy chicken, earthy mushrooms, and a rich, creamy garlic sauce. Perfect for a comforting and indulgent meal.
Ingredients
2 chicken breasts, boneless and skinless
8 oz linguine
2 tablespoons olive oil
1 tablespoon butter
3 cloves garlic, minced
1 cup mushrooms, sliced
1/2 cup chicken broth
1 cup heavy cream
1/4 cup grated Parmesan cheese
Salt and pepper to taste
Fresh parsley, chopped (for garnish)
Instructions
- Cook the linguine according to package instructions. Drain and set aside, reserving 1/2 cup of pasta water.
- In a large skillet, heat olive oil and butter over medium heat. Season chicken breasts with salt and pepper, then add to the skillet. Cook for 5-7 minutes per side, or until golden brown and cooked through. Remove from skillet and set aside.
- In the same skillet, add garlic and sauté for 1 minute until fragrant. Add sliced mushrooms and cook for another 3-4 minutes, or until they begin to soften.
- Pour in chicken broth and bring to a simmer, scraping up any browned bits from the bottom of the pan. Let it reduce for 2-3 minutes.
- Add heavy cream to the skillet, stirring to combine. Allow the sauce to simmer and thicken for about 4-5 minutes.
- Slice the cooked chicken into strips and return it to the skillet. Stir in the Parmesan cheese until the sauce becomes smooth and creamy.
- Add the cooked linguine to the skillet, tossing everything together. If the sauce is too thick, add some reserved pasta water to reach your desired consistency.
- Garnish with chopped parsley and serve immediately.
Notes
Add more vegetables like spinach, peas, or sun-dried tomatoes for extra flavor.
For a spicier dish, add red pepper flakes or hot sauce to the sauce.
For a lighter twist, swap chicken for turkey breasts, crispy tofu, or grilled shrimp.
Feel free to try different cheeses like Pecorino Romano or sharp cheddar.
