Description

A creamy garlic mushroom chicken linguine with juicy chicken, earthy mushrooms, and a rich, creamy garlic sauce. Perfect for a comforting and indulgent meal.


Ingredients

2 chicken breasts, boneless and skinless

8 oz linguine

2 tablespoons olive oil

1 tablespoon butter

3 cloves garlic, minced

1 cup mushrooms, sliced

1/2 cup chicken broth

1 cup heavy cream

1/4 cup grated Parmesan cheese

Salt and pepper to taste

Fresh parsley, chopped (for garnish)


Instructions

  1. Cook the linguine according to package instructions. Drain and set aside, reserving 1/2 cup of pasta water.
  2. In a large skillet, heat olive oil and butter over medium heat. Season chicken breasts with salt and pepper, then add to the skillet. Cook for 5-7 minutes per side, or until golden brown and cooked through. Remove from skillet and set aside.
  3. In the same skillet, add garlic and sauté for 1 minute until fragrant. Add sliced mushrooms and cook for another 3-4 minutes, or until they begin to soften.
  4. Pour in chicken broth and bring to a simmer, scraping up any browned bits from the bottom of the pan. Let it reduce for 2-3 minutes.
  5. Add heavy cream to the skillet, stirring to combine. Allow the sauce to simmer and thicken for about 4-5 minutes.
  6. Slice the cooked chicken into strips and return it to the skillet. Stir in the Parmesan cheese until the sauce becomes smooth and creamy.
  7. Add the cooked linguine to the skillet, tossing everything together. If the sauce is too thick, add some reserved pasta water to reach your desired consistency.
  8. Garnish with chopped parsley and serve immediately.

Notes

Add more vegetables like spinach, peas, or sun-dried tomatoes for extra flavor.

For a spicier dish, add red pepper flakes or hot sauce to the sauce.

For a lighter twist, swap chicken for turkey breasts, crispy tofu, or grilled shrimp.

Feel free to try different cheeses like Pecorino Romano or sharp cheddar.
