Ingredients
4 boneless, skinless chicken breasts
1/2 cup grated Parmesan cheese
1/2 cup breadcrumbs (preferably panko)
1 tablespoon garlic powder
1 tablespoon Italian seasoning
1 teaspoon salt
1/2 teaspoon black pepper
1/4 cup olive oil
1 tablespoon butter
4 cloves garlic, minced
1 cup heavy cream
1/2 cup grated Parmesan cheese
1 lb pasta (such as spaghetti or fettuccine)
2 cups broccoli florets
Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Place the broccoli florets on the baking sheet and drizzle with olive oil, seasoning with salt and pepper. Roast for 15-20 minutes, or until tender and slightly crispy.
- While the broccoli roasts, prepare the chicken. In a shallow bowl, combine the grated Parmesan, breadcrumbs, garlic powder, Italian seasoning, salt, and pepper.
- Dip the chicken breasts into the breadcrumb mixture, pressing gently to coat both sides.
- Heat olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook for 4-5 minutes per side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.
- In the same skillet, melt butter over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.
- Stir in the heavy cream and bring to a simmer. Add the grated Parmesan cheese and stir until the sauce thickens, about 3-5 minutes.
- Meanwhile, cook the pasta according to package instructions. Drain and toss with the roasted broccoli.
- To serve, plate the pasta with roasted broccoli, top with the crispy chicken breasts, and drizzle with the creamy garlic Parmesan sauce.

Vegetarian Option: Replace chicken with sautéed mushrooms or roasted cauliflower.
Spicy Kick: Add red pepper flakes to the sauce for some heat.
