Description

Creamy Garlic Parmesan Crusted Chicken over Roasted Broccoli Pasta is a comforting and indulgent dish with golden-crusted chicken, rich garlic Parmesan sauce, and roasted broccoli on a bed of pasta.


Ingredients

4 boneless, skinless chicken breasts

1/2 cup grated Parmesan cheese

1/2 cup breadcrumbs (preferably panko)

1 tablespoon garlic powder

1 tablespoon Italian seasoning

1 teaspoon salt

1/2 teaspoon black pepper

1/4 cup olive oil

1 tablespoon butter

4 cloves garlic, minced

1 cup heavy cream

1/2 cup grated Parmesan cheese

1 lb pasta (such as spaghetti or fettuccine)

2 cups broccoli florets

Salt and pepper to taste


Instructions

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Place the broccoli florets on the baking sheet and drizzle with olive oil, seasoning with salt and pepper. Roast for 15-20 minutes, or until tender and slightly crispy.
  3. While the broccoli roasts, prepare the chicken. In a shallow bowl, combine the grated Parmesan, breadcrumbs, garlic powder, Italian seasoning, salt, and pepper.
  4. Dip the chicken breasts into the breadcrumb mixture, pressing gently to coat both sides.
  5. Heat olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook for 4-5 minutes per side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.
  6. In the same skillet, melt butter over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.
  7. Stir in the heavy cream and bring to a simmer. Add the grated Parmesan cheese and stir until the sauce thickens, about 3-5 minutes.
  8. Meanwhile, cook the pasta according to package instructions. Drain and toss with the roasted broccoli.
  9. To serve, plate the pasta with roasted broccoli, top with the crispy chicken breasts, and drizzle with the creamy garlic Parmesan sauce.

Vegetarian Option: Replace chicken with sautéed mushrooms or roasted cauliflower.
